What is Teji?

Teji belongs to the family of honey wines, often called mead. Its defining ingredient is honey, which is mixed with water and fermented. This process produces alcohol and changes the sweetness and flavour of the drink.

The familiar vessel for tej is the berele: a glass with a rounded body and a narrow neck. It is closely associated with the drink, and is the shape shown in our Teji image.

Tej is part of Ethiopian social life, from dedicated tej houses to weddings, festivals and gatherings. The drink and its recognisable glass have become an enduring part of that setting: people sharing food, conversation and an occasion.

  1. Begin with honey

    Honey is mixed with water to form the base. The honey used contributes to the character of the finished wine.

  2. Add gesho

    Traditional recipes commonly include gesho leaves or stems, an Ethiopian botanical that contributes flavour and a balancing bitter edge.

  3. Let it ferment

    Fermentation turns some of the honey’s sugars into alcohol. The maker’s method affects the balance of sweetness, tang and strength.

What does it taste like?

Tej can combine honey aroma and sweetness with a fermented tang and botanical character. It is often golden or yellow, and may be cloudy. The exact balance varies with the honey and how it is made.

Start with a small sip and notice how the first impression changes as you taste. There is more to discover than sweetness alone.

How to enjoy it

The traditional berele makes tej immediately recognisable. Its rounded body and narrow opening give it a very different appearance from a stemmed wine glass.
