Begin with the table.

Tell the team how many people are eating and what everyone enjoys. If someone prefers vegetables, someone wants chicken and someone is uncertain about chilli, say so before choosing. The menu photographs show the different preparations; the team can confirm today’s portions and accompaniments.

Then meet the injera.

Injera is the soft, finely bubbled flatbread beneath and beside the food. Tear off a small piece and use it to pick up one serving at a time. Let your first few bites stay separate so you can notice the difference between a smooth stew, a vegetable and a piece of meat.
